Unidine Corporation is led by a team of executive managers who are capable, experienced and client-focused. Each one of these seasoned professionals brings knowledge and skill, along with proven performance and a passion for fresh food to the organization.



Richard has an extensive background in food and service management in the health care industry. As Founder, President and CEO, Richard spearheaded the development of Unidine from concept to implementation. Prior to establishing Unidine, Schenkel was CEO and President of a regional health care service management company and a food service management firm. His leadership experiences include various executive level positions with two major international health care service firms directing various operational, sales and marketing initiatives. He has a degree from the University of Wisconsin.


SVP, Operations – Specialty Culinary Group

Tom brings over 30 years experience in contract food service to this critical role within our organization. As the Senior Vice President, Operations – Specialty Culinary Group, Tom provides our Healthcare and Corporate Culinary teams with an additional level of guidance and expertise in delivering the most holistic and guest-driven programs in the industry. Tom specializes in the integration of cultural and operational approaches that leverage the strengths of an organization’s people. Tom has a degree from the Culinary Institute of America, as well as a Bachelor Degree in Hospitality, Restaurant and Tourism from the University of New Haven.

Minit Gupta

Chief Financial Officer

Minit joined Unidine in 2017 as SVP, Corporate Development after nearly a decade of experience in investment banking. As Executive Director at Morgan Stanley, he co-managed North America Business Services, focusing on capital markets and M&A activity. Prior to Morgan Stanley, Minit spent several years at Deloitte Consulting, where he managed multi-million dollar projects in healthcare and technology sectors. Minit holds an MBA from the Kellogg School of Management, Northwestern University.



Janet DePiero is responsible for all organizational development and people management at Unidine. She has over 20 years of executive HR leadership with a track record of aligning organizations with business strategy. Janet developed her expertise through long tenures with companies that represent some of America’s most respected family and athletic footwear brands, which she led through successful acquisitions, forged collaborative business partnerships and coached executive teams. Janet earned her Bachelor of Science degree in Education from Lesley University.

Andrew Kopans

SVP, General Counsel

As Unidine’s General Counsel, Andrew Kopans directs all matters and activities related to corporate and financial transactions, contracts, litigation and compliance with relevant laws. Prior to joining Unidine, he represented some of the region’s largest companies in a wide variety of corporate and securities matters, including mergers and acquisitions and capital markets transactions, while serving as Counsel for an elite global law firm. Andrew earned his B.A. magna cum laude from Washington University in St. Louis and his J.D. from Northwestern University School of Law where he was Senior Editor of the Journal of International Law and Business. He has been selected for inclusion in Chambers USA: America’s Leading Lawyers for Business in 2014 and 2015.



David is a hands-on industry leader with more than 15 years of IT management experience in the software development, strategic asset management and health and fitness industries. He is skilled at developing and pushing an organization’s strategic technology direction towards operational efficiency, cost effectiveness and market competitiveness, and is adept at shaping policy for national and global IT organizations.



Chris leads Unidine’s supply chain team. He has an extensive background in contract foodservice purchasing in healthcare, school, B & I, sport and entertainment markets. With over 20 years’ experience in food, paper, distribution, supplies, equipment and services purchasing, Chris brings a solutions based mindset to deliver the right product at the right cost and time. Prior to joining Unidine, Chris led purchasing teams at one of the largest Group Purchasing Organizations in the United States, where he executed supply strategies for over 14,000 facilities. Chris holds a Masters of Business Administration with a concentration in Finance and International Business from Florida International University in Miami, Florida.

Daniel Natterman

SVP, Business Development

Dan Natterman leads Unidine’s Sales and Marketing teams. In this role, Dan develops sales strategies for our corporate, healthcare and senior living segments, aligning the organization to win and grow in new markets.

Dan’s responsibilities include setting the course for innovation, refining the company’s brand story, understanding market segmentation and driving revenue growth. Dan ensures that Unidine is well positioned to meet the needs of the evolving customers we serve, today and into the future.

Dan’s greatest strength is his ability to identify creative individuals of diverse marketing and sales backgrounds and motivate them towards a unified vision. He thrives on challenges, particularly those that improve the overall company culture and trajectory.

Prior to Unidine, he served as VP of Operations for a global foodservice management company. He earned his MBA from Pennsylvania State University and is the owner of a large collection of strange socks which inspire fashion contests among the sales organization.

Lee Boudreau

SVP, Operational Excellence

Lee brings over 25 years of industry experience to his role. He has an extensive background in operations, consumer marketing and operational excellence. Lee’s role is to ensure Unidine has the right operating systems, standards and tools, so that our operators consistently provide the highest quality food, service and customer experience to our clients, residents and guests. He leads our Culinary, Nutrition Health & Wellness, Merchandising and Consumer Marketing strategies and teams.

Prior to Unidine, Lee was Vice President for a global food service contractor. He holds degrees from Shippensburg University and University of Phoenix.

Victoria Albert

VP, Marketing

Victoria joined Unidine as Vice President, Marketing. She is a skilled customer experience executive with wide-ranging vertical and cross-functional expertise. Before Unidine, she served as Vice President, Digital Marketing at Wellington Management, where she designed and built end-to-end client experience programs and oversaw content distribution on a global footprint. She held strategic marketing and program execution roles in finance/wealth management, insurance, and healthcare industries, where her work was recognized with multiple nominations and awards. Victoria is a proven thought leader in designing solutions that anticipate and respond to evolving client needs. She holds degrees from Boston University, Tufts University, and Yale University.
